Chocolate-Peanut Butter Rice Cereal Bars
A blast from the past, enhanced.
6 tablespoons butter
4 cups miniature marshmallows
1/2 cup smooth peanut butter
6 cups puffed rice cereal
2/3 cup semi-sweet chocolate chips
Butter a 9" x 13" pan.
In a large soup pot, melt butter. Add marshmallows and cook over medium-low heat until they melt. Remove from heat and stir in peanut butter. Fold in cereal until well mixed. Spoon into prepared pan and press down firmly with your hands. Allow to cool.
Meanwhile, melt chocolate in a double boiler over hot, not boiling water. Drizzle over cereal bars and allow chocolate to firm up. Note: To make chocolate easier to drizzle, stir in a few drops of vegetable oil. Makes 24 bars. Store, covered, at room temperature.
