My Father's Forbidden Christmas Cookies
          

Easy, no-bake old-fashioned rum balls.  Like I was not allowed to eat growing up.


      Ingredients

2 cups vanilla wafer crumbs (I do it in the food processor)

2 tablespoons cocoa powder

1 cup confectioners' sugar (no need to sift) + more for rolling

1 cup finely chopped pecans (food processor)

2 tablespoons white corn syrup

1/2 cup dark rum


      The Recipe

In a large bowl, mix together wafer crumbs, cocoa, sugar and pecans.  Stir in syrup and rum.  Shape into one inch balls and roll in more confectioners' sugar.  Tastes best a day or two after.  Store, covered, at room temperature for up to two weeks.  Makes about 3 dozen.
