Coffee-Cocoa Whipped Cream Angel Food Cake
          

My favorite birthday cake.


      Ingredients

1 angel food cake mix

2 tablespoons cocoa powder

Frosting:

3 cups heavy whipping cream

2 tablespoons sugar

1 heaping tablespoon cocoa powder

2 tablespoons instant coffee crystals

Malted milk balls (or whatever) for decoration


      The Recipe

Replace two tablespoons of the cake flour part of the mix with cocoa powder.  Bake cake according to package directions.  Allow to fully cool.

Make frosting:  In a large bowl, whip cream until soft peaks form (note:  I do it in the sink to avoid splatter everywhere).  Fold in sugar, cocoa powder and coffee crystals, then beat until stiff peaks form.  Frost entire cake and decorate with malted milk balls.  Serves 8 - 10.
