Sour Cream Black & Blue Berry Pie
...with a Brown Sugar Crust. This is one spectacular pie!
2 and 2/3 cups sour cream
1 1/2 cups sugar
6 tablespoons flour
2 teaspoons vanilla extract
1/4 teaspoon salt
2 cups EACH blackberries and blueberries
2 deep dish 9" unbaked pie crusts
1 cup brown sugar, packed
2/3 cup flour
1/2 cup butter, softened (1 stick)
Preheat oven to 400 degrees F. In a large bowl, stir together sour cream, sugar, flour, eggs, vanilla and salt. Gently fold in berries. Divide filling between the pie crusts and bake 45 minutes, or just until set.
Make topping: Combine brown sugar, flour and butter in a medium bowl. Mash together with a fork. Sprinkle topping over the top of the pies and return to oven for about 20 - 25 minutes. Let cool before cutting.
