Hawaiian Grilled Pineapple Sundae

...with Caramel Sauce and Macadamia Nuts.


1 Pineapple, unpeeled, trimmed and sliced into 1" rounds (about 4 - 6)

2 teaspoons dark rum per pineapple slice

1/2 cup brown sugar

1 teaspoon red pepper flakes

1/2 teaspoon salt

Good vanilla ice cream

Caramel sauce

Coarsely chopped Macadamia nuts

      The Recipe

Drizzle each side of the pineapple slice with one teaspoon dark rum.  In a small bowl, mix together brown sugar, pepper flakes and salt.  Sprinkle both sides of the pineapple slice with the brown sugar mixture and place on a hot grill.  Grill about two minutes, then sear the other side.

For each serving:  Cut each slice into halves.  Place one (or two) slices of the pineapple on a plate.  Top with two big scoops of vanilla ice cream.  Drizzle caramel over and sprinkle nuts on top.  Serves 4 - 8.
