From St. Barths! The Hideaway Mango Mojito

A fresh take on one of the world's most popular cocktails - from one of my favorite restaurants on St. Barths.


For each Mango Mojito:

1 1/2 teaspoons brown sugar

2 - 3 tablespoons fresh lime juice

1/3 cup loosely packed mint

1/4 cup mango juice

2 ounces white rum (preferably Havana Club)

1/2 cup ice cubes

1/4 cup club soda (preferably Pierrier)

      The Recipe

Put brown sugar in a pint glass.  Add lime juice, mint and mango.  Mash with a pestle.  Pour in rum, add ice cubes, cover (you can use another pint glass if you don't have a martini shaker) and shake well.  Top off with club soda.
