The Perfect Caprese Sandwich

Crunchy on the outside, soft in the center - filled with pesto, cheese and tomatoes.


1 loaf uncut crusty Italian bread

4 tablespoons soft butter

4 tablespoons pesto

4 thick slices fresh Mozzerella cheese

2 thick tomato slices

      The Recipe

Preheat oven to low broil.  Cut 4 thick slices of bread and arrange on baking pan.  Butter each slice on one side and put under broiler until lightly browned.  Flip bread over and spread one tablespoon of pesto on each slice.  Top with cheese slices and put back under broiler just for a minute or two until cheese softens.  Place tomato slices on two  of the bread pieces, close sandwich, and cut in half.  Serves 2.
