Duck Egg Pizza with a Puff Pastry Crust
A simple homemade pizza featuring a buttery, puff pastry crust and fried duck eggs.
Ingredients
1 package frozen puff pastry shells (6 shells)
1 cup shredded Mozzarella cheese
1 small tomato, diced
1/3 cup shaved ham, diced
Olive oil
Salt and pepper
2 tablespoons chopped fresh cilantro
2 duck eggs
The Recipe
Defrost pastry shells 20 minutes. Preheat oven to 450 degrees.
Stack pastry shells and roll with rolling pin on floured surface to a shape that fits your baking sheet. Place on pan and bake 10- 15 minutes, or until golden brown.
Meanwhile, fry two duck eggs in butter, sunny side up. Set aside.
Remove crust from oven. Cut slits to vent. Flatten with the back side of a fork. Sprinkle on cheese first, then tomato and shaved ham. Drizzle with a little olive oil and season with salt and pepper. Sprinkle on cilantro. Return to oven 4 minutes, or until cheese melts.
Top pizza with fried eggs. Break yolks over pizza and enjoy. Serves 2.
