Cowboy Salt and Vinegar Ribs
An authentic cowboy recipe they enjoyed while on a cattle drive.
4 pounds pork baby back ribs
1 cup water
1 cup whiskey
3/4 cup apple cider vinegar
1 1/2 teaspoons salt
1 teaspoon pepper
1 1/4 teaspoons sugar
Preheat oven to 375 degrees F. Place ribs in roasting pan. Combine water and whiskey and pour over ribs. Cover with heavy foil and bake 45 minutes.
Meanwhile, prepare sauce: In a medium bowl, combine vinegar, salt, pepper and sugar.
Uncover ribs, reheat oven to 500 degrees F., pour vinegar sauce over and bake 25 minutes more. Add more whiskey water if necessary. Serves 4. Note: You can also finish them off on the grill, basting every so often with the cider glaze.
