Chihuahua Meat Pie

Who knew those little dogs could be so tasty? Actually, I discovered a semi-soft light yellow cheese called Mexican Chihuahua Melting Cheese that is Mexico's version of a mozzarella or a Monterrey Jack. It's made from cow's milk and comes from the Northern Mexican state of Chihuahua. This recipe is a simple meat pie perked up with a little Jalapeño pepper and topped with Chihuahua cheese.

      Ingredients

½ pound lean ground pork
¾ pound ground sirloin
3 cloves finely chopped garlic
2 Jalapeño peppers, seeded and finely diced
½ cup dry bread crumbs
¼ cup ketchup
1 egg
½ teaspoon salt
1 unbaked deep dish 9” pie crust
½ pound Mexican Chihuahua cheese, cubed

      The Recipe

Preheat oven to 375 degrees. In a large bowl, mix together meats, garlic, peppers, bread crumbs, ketchup, egg and salt. Gently press mixture into the pie crust. Place on a cookie sheet. Bake 35 – 40 minutes or until meat is cooked through. Remove from oven and turn oven to broil. Arrange cubes of cheese over the top. Broil just a few minutes, or until the cheese is melted and lightly browned. Let pie rest 10 minutes before cutting. Serves 4 – 6.
