First things first: Order a large plain cheese pizza from your favorite pizzeria for delivery.
Meanwhile, make the topping:
1 medium onion, thinly sliced
1/2 lb. bison sirloin steak, thinly sliced into strips
(I have my butcher do this to save a step)
1 teaspoon dried oregano
1 large tomato, diced
In a medium skillet, sauté onion in a little olive oil until softened. Add bison strips and oregano and cook until bison is no longer pink. Season with salt and pepper to taste. Stir in tomato and remove from heat.
Preheat oven to broil. When pizza arrives, transfer slices onto two baking sheets. Top with bison mixture and broil just a minute or two.
Note: I’m a big fan of bison. It is leaner than skinless, boneless chicken breasts and has a wonderful flavor, similar to beef.
