Put all ingredients into a large bowl and mix with hands just until ingredients are nicely combined (do not overmix). Form into Ping-Pong sized balls and arrange on skewers (this will make about 36 meatballs). Chill until ready to grill.
Brush meatballs with a coating of mayonnaise (this will prevent them from sticking and falling apart on the grill). Grill until meat is done, turning once. Serves 6, figuring 6 meatballs per person.
Serving suggestion: This goes absolutely perfectly with a side of cooked spaghetti tossed with diced tomatoes, olive oil, seasonings and grated Parmesan.
