Tombstone Bones
          

 This version of pork ribs is similar to the way the cowboys would cook ribs while sitting around a campfire on the range. Its flavor will remind you of salt and vinegar potato chips.


      Ingredients

2 slabs pork ribs (my favorite cut is baby back ribs)
3/4 cup apple cider vinegar
1 tsp. sugar
1 1/2 tsp. salt
1 tsp. pepper


      The Recipe

Place ribs in a large roasting pan, cover with water, cover pan with heavy foil and bake in a 375 degree oven for 45 minutes.
In a small bowl, mix together vinegar and remaining ingredients.
Remove ribs from oven and drain water. Raise oven temperature to 500 degrees. Pour vinegar sauce over ribs and bake 25 minutes more, uncovered. Baste once or twice in final cooking stage.  Serves 2 – 4.
Note: You can finish ribs on the grill after the roasting part. Just baste with sauce while they're grilling.
Fun fact: Cowboys used to call silverware 'Eatin' Irons'.
