Toronto's Famous Peameal Bacon Sandwich
          

Fried peameal bacon, topped with Canadian aged cheddar, slathered with spicy mustard, all tucked into a soft bun.


      Ingredients

4 - 6 slices peameal bacon*

4 slices aged Cheddar cheese

1 teaspooon (or more) spicy brown mustard

2 large, soft rolls


      The Recipe

For 2 sandwiches:

Melt butter in a frying pan and brown peameal bacon on one side.  Flip, top with cheese and cook until cheese melts.  Place on soft buns and garnish with mustard.

*Note:  If you can't buy peameal bacon where you live, take slices of Canadian bacon, dip in beaten egg and coat with cornmeal before frying.
