Rocky Mountain Oysters
          

Deep-fried bull testicles from Skip's Pour House in Carbondale, Colorado.


      Ingredients

Bull testicles

Flour

Black pepper

White pepper

Salt

Your choice of sauces:  Barbecue, horseradish, ranch dressing, hot sauce


      The Recipe

Rocky Mountain Oysters can be purchased online, with prices ranging from $10 to $20 per pound, depending on how much you buy.  If not already sliced, slice into pieces about 1/4" thick.  Season flour with peppers and salt to taste.  In a deep fryer or deep skillet, heat vegetable or peanut oil until it passes the sizzle test.  Fry until lightly golden, about 2 - 3 minutes.  Do not overcook or they will be tough.  Eat straight up, splashed with a little lemon, or with your choice of sauces.  They're really tender, taste like chicken/liver and of course, are a real conversation piece.
