Cowboy Salt and Vinegar Ribs
Braised in whiskey water and glazed in spiced cider vinegar.
4 pounds pork baby back ribs
1 cup water
1 cup whiskey
3/4 cup apple cider vinegar
1 1/2 teaspoons salt
1 teaspoon pepper
1 1/4 teaspoons sugar
Preheat oven to 375 degrees farenheit. Place ribs in roasting pan. Combine water and whiskey and pour over ribs. Cover with heavy foil and bake 45 minutes.
Meanwhile, prepare sauce. In a medium bowl, combine vinegar, salt, pepper and sugar.
Uncover ribs, reheat oven to 500 degrees farenheit, pour vinegar sauce over and bake 25 minutes more. Add more whiskey water if necessary. Serves 4. Note: After the ribs cook in the whiskey water, you can finish them off on the grill, basting every so often with the cider glaze.
