Caribbean Curried Goat Stew
          

From the island of Tortola.  Lean, tasty and tender and only 6 ingredients


      Ingredients

2 large onions, chopped

About 5 or 6 potatoes (I like to use yellow potatoes)

8 cups chicken stock

1 small can (14.5 ounces) diced tomatoes

2 pounds goat meat, cut into 1" cubes

2 - 3 teaspoons good curry powder

1 teaspoon salt

1/2 teaspoon pepper


      The Recipe

Heat a little olive oil in a large soup pot.  Add onions and saute until tender and lightly golden.  Meanwhile, dice potatoes.  Add to the onions, along with the stock, tomatoes, goat, curry, salt and pepper.  Bring to a boil, lower heat to simmer, cover and cook for 2 - 2 1/2 hours.  Serves 6.
