Cappy Fest and Homemade Italian Sausage

      Ingredients

5 lbs. lean, ground pork loin

2 tablespoons salt

1 teaspoon black pepper

1 teaspoon fennel seeds

3/4 teaspoon red pepper flakes

1/2 tablespoon minced garlic

5 ounces red wine


      The Recipe

Place meat in a large bowl.  In a small bowl, mix all the spices together.  Add spices to pork along with wine and mix with hands.  Form into patties and fry until thoroughly cooked.
