Silence of the Lamb Chops
Almond Walnut Crusted Lamb Chops set in a strange video.
1/2 cup whole, blanched almonds
2/3 cup walnuts
2/3 cup Panko bread crumbs
1/2 cup flour
1 tablespoon tarragon
1 tablespoon brown mustard
1 stick butter (8 tablespoons) + 2 tablespoons olive oil
12 loin lamb chops
2/3 cup white wine
Salt and pepper
In a food processor, chop almonds and walnuts. Place in medium bowl along with Panko bread crumbs. In another bowl, mix together flour with tarragon. In a third bowl, beat eggs with mustard.
In a large skillet, heat butter and olive oil. Dip lamb chops first in the flour mixture, then egg mixture, then nut mixture. Fry until golden brown, flip and fry second side. Add wine, cover and let simmer ten minutes. Season with salt and pepper. Serves 4.
