Bacon-Wrapped Pork Tenderloin stuffed with Fig Goat Cheese
A fantastic pork dish using only three ingredients.
Ingredients
2 pork tenderloins
1/2 pound fig goat cheese, room temperature
8 slices thin bacon
1 teaspoon salt
2 - 3 teaspoons black pepper
The Recipe
Preheat oven to 400 degrees F. Slice tenderloins length-wise, but not all the way through. Lay flat and pound with meat mallot until 1/2" thin. Take half the fig cheese and spread it on the inside. Roll it up and wrap 4 slices of bacon around it. Repeat with second tenderloin. Sprinkle salt and pepper on both.
Roast about 40 minutes, switch oven to broil, and broil a couple of minutes until the bacon is crispy. Allow to cool for 10 minutes before slicing. Serves 4 - 6. Note: If you can't find fig goat cheese, mix together fig jam and plain goat cheese in a food processor.
