Chuck Wagon Bison and Rice
A cowboy's dream dinner - made for some weird friends.
2 tablespoons EACH olive oil and butter
2 medium onions, diced
2 1/2 pounds ground bison
2 cups diced cremini mushrooms
2 cups beef stock
3 tablespoons tomato paste
2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon red pepper flakes
2 tablespoons instant coffee crystals
Long grain white rice (enough for six servings)
1/2 cup heavy cream
3 cups grape tomatoes, halved
Heat oil and butter in a large skillet. Saute onions just until they start getting soft. Mix in bison and cook until meat is almost done. Stir in mushrooms. Add beef stock, tomato paste, salt, pepper, red pepper flakes and instant coffee. Mix well, turn heat to low and simmer, uncovered, 20 minutes. Add more beef stock if necessary.
Meanwhile, cook rice according to package directions. Stir in cream.
Fold rice into bison mixture and top with tomatoes. Serves 6.
