Neat Josephs

Sloppy Joes without the slop.

      Ingredients

1 onion

1/2 green bell pepper

1 stalk celery

1 tomato

1/3 cup ketchup

2 tablespoons brown sugar

2 tablespoons Worcestershire sauce

1 1/2 pounds ground sirloin

Flour for dredging

Vegetable oil

4 hamburger buns

Sour cream

      The Recipe

Chop onion, green pepper and celery to a fairly fine dice.  In a medium skillet, heat a little olive oil and cook vegetables until tender and golden.  Chop tomato and add to skillet, along with ketchup, brown sugar and Worcestershire.  Stir and let simmer 10 minutes, or until most of the liquid has cooked off and tomatoes are broken down.  Allow to cool.

Place ground sirloin in a large bowl, add vegetable mixture and mix gently, but well with your hands.  Form 4 patties.  In same vegetable skillet, heat 3 tablespoons vegetable oil.  Dredge burgers in flour and fry until done, turning once (the brown sugar will caramelize and give it a blackened look).  Place on bun and top with a dollop of sour cream.  Serves 4.
