Rocky Mountain Ribs
          

Pork loin rubs steeped in beer and vinegar, then finished off on the grill with an amazing dry rub mixture.


      Ingredients

2 full slabs pork loin ribs

12 ounce beer

2/3 cup apple cider vinegar

2 tablespoons brown sugar

2 tablespoons chili powder

2 tablespoons dry mustard

2 tablespoons instant coffee crystals

1 tablespoon granulated garlic

1 tablespoon salt

1 tablespoon cayenne pepper

3 tablespoons melted butter


      The Recipe

Preheat oven to 375 degrees F.  Arrange ribs in a large roasting pan, Pour beer and vinegar over, cover with heavy foil and roast 1 1/2 hours.

In a small bowl, combine all dry rub ingredients.

When ribs are done, cut each slab in half for easier grilling.  Place on medium hot grill and generously sprinkle 2/3 of the spice rub on top.  Flip ribs over to sear on spices (about 5 minutes).  Sprinkle remaining spices on bottom sides, flip again and cook for a few more minutes.  Transfer to serving platter and drizzle butter all over.  Serves 4 - 6.
