Pasta with Tomato-Brie Sauce

Only 4 ingredients for a very unique pasta sauce.


1 pound rotini pasta (or your choice)

3 medium tomatoes

4 cloves garlic, minced

1 teaspoon dried oregano

About 1 pound Brie cheese

1/2 teaspoon EACH salt and pepper


      The Recipe

Put pasta water on to boil.  Dice tomatoes.  Heat a little olive oil in a large skillet and cook garlic for just a few seconds.  Add tomatoes and oregano, bring to a simmer and cook about 6 minutes, or until tomatoes are broken down.  Meanwhile, put pasta on to cook.

Prepare Brie cheese by cutting off rind and discarding.  Cut into chunks and add to tomato sauce.  Season with salt and pepper and cook until Brie is melted.  Add cooked, drained pasta to pan and toss well.  Serves 4.
