1/2 cup whole walnuts
2 heads Boston lettuce, washed, torn and chilled
3 - 4 fresh figs, diced (you can also use dried figs)
Shaved Parmesan cheese
Spread walnuts on a small baking sheet and roast in a 500 degree oven for 3 - 5 minutes. Set aside.
In a large salad bowl, place lettuce, figs, Parmesan cheese and walnuts.
Drizzle salad with extra virgin olive oil, the juice of 1 large lemon and salt and pepper. Toss to coat. Serves 4.
Serving suggestion: For a truly Bordeaux dinner, serve with roasted duck or chicken and garlic French bread.
