Broccoli-Almond Salad

This is my take on a popular broccoli salad. It's a great way to get broccoli into your diet. (When my kids were little, I told them stalks of broccoli were just cute miniature trees and Brussels sprouts were Barbie-sized cabbages.)


2 bunches broccoli
2 tomatoes, chopped
2/3 cup raisins
2/3 cup almond slices, browned in a little butter
Italian dressing or balsamic vinaigrette

      The Recipe

Trim and peel broccoli stems. Chop into small bite-sized pieces and place in large bowl. Add 1/2 cup water, cover with plastic wrap and microwave 8 - 10 minutes or until fork tender, but slightly firm. Drain and allow to cool.
Add tomatoes, raisins and almond slices to broccoli. Drizzle with just enough salad dressing to coat and toss well. (Some like a creamy dressing with this recipe - try buttermilk dressing). Serve chilled or at room temperature.
This is enough for 4 - 6 people. It's a good travel salad to take to parties.
