Cucumber-Apple Cider Salad
          

A completely refreshing salad. Sometimes apple cider is tough to find, but you can make a can of frozen apple juice, only use less water to make it strong.


      Ingredients

2 English cucumbers (the long, seedless kind)
1 medium red onion, coarsely chopped
Dressing:
1/2 cup apple cider
3 tablespoons white vinegar
1/2 teaspoon sugar
1/4 teaspoon each salt and pepper


      The Recipe

Slice cucumbers into thin slices and place in a large bowl, along with red onion. In a small bowl, whisk together all dressing ingredients. Pour over cucumber mixture and toss gently. Cover and refrigerate 1 hour but not more than 3 for best results. Any longer will make it a little soggy, although it still tastes good. Give it a quick toss again before serving.  Serves 4.
