Good Old Macaroni and Tuna Salad
          

Growing up, whenever my parents had a summer backyard pot luck with friends, one of my mother's friends would always bring a giant bowl filled with this tuna macaroni salad. I'd always pass on the Jell-O salads and shaved carrot salads and only eat this. It still really hits the spot every now and then. By the way, if you don't like mayonnaise, skip this one...and no, you can't make it with Miracle Whip.


      Ingredients

1/2 lb. elbow macaroni
1 large (12 ounce) can Albacore tuna packed in water,
drained
3 - 4 stalks of celery, finely chopped
3 - 4 hard-boiled eggs, chopped
Mayonnaise


      The Recipe

Boil macaroni until tender and drain thoroughly in cold water. Transfer to a large bowl. Mix in tuna, celery and eggs. Add enough mayonnaise to coat nicely. Salt and pepper to taste. Serve mounded on a plate surrounded by tomato slices.
Option: I like to sprinkle chopped raw onion (especially sweet Vidalia onion) on top.
