Mixed Greens with Apple, Red Onion & Back Bacon and Pesto-Lime Dressing
It hits all of the taste buds with bitter greens, sweet apple, savory onion and salty Canadian bacon. And the dressing! I could drink it.
½ pound Canadian bacon, slivered
½ pound mixed gourmet field greens, rinsed and chilled
2 yellow apples, sliced
½ red onion, thinly sliced
1/3 cup pesto
¼ cup olive oil
Juice of 2 limes
Fry bacon in a little butter or oil until crisp. Set aside. Put greens in a salad bowl. Add apples, red onion, and bacon.
For the dressing put pesto in a small bowl and thin it by whisking olive oil and lime juice. Toss well.
