835 Bean Salad

Much better than the traditional three bean salad!  Enhanced with pasta and a sweet mustard dressing.


8 ounces egg noodle flakes or other small pasta

1 large sweet onion, chopped

1 can black beans

1 can chick peas (garbonzos)

1 can cut green beans

2 cans cannellini beans

Optional:  6 slices bacon, cooked and crumbled


2/3 cup extra virgin olive oil

1/2 cup lemon-white wine vinegar

2 heaping tablespoons prepared brown mustard

1 tablespoon sugar

1 teaspoon salt

1/2 teaspoon pepper

      The Recipe

Put pasta on to cook.  While pasta is cooking, place onion in a large bowl.  Rince and drain all the beans and add to bowl.  Rinse and drain pasta in cold water and add to bowl. Optional:  Add crumbled bacon.  Make dressing:  Whisky together ingredients in a medium bowl and toss with bean salad.  Serves 8 - 10.
