Burnt Walnut Tomato Salad
Some foods taste better burnt! Layers of tomato, balsamic, shaved Parmesan cheese - topped with brown sugar burnt walnuts.
4 medium tomatoes, sliced
1/2 teaspoon EACH salt and pepper
1/3 cup balsamic vinegar
1/2 cup shaved Parmesan cheese
2 tablespoons butter
1 1/2 cups walnut halves
1/2 cup brown sugar
Arrange tomato slices on a platter. Sprinkle with salt, pepper, balsamic and Parmesan.
In a small skillet, melt butter and cook walnuts until deep brown, stirring constantly. Add brown sugar and cook until sugar is dissolved and nuts are slightly blackened. Top salad with warm nuts. Serve at room temperature (never refrigerate a tomato!). Serves 4.
