1 cup walnuts, coarsely chopped
1 tablespoon butter
Juice of one lemon
1/3 cup French walnut oil
1/2 teaspoon pepper
1 teaspoon salt
1 heads Boston or butter lettuce, cleaned and chopped
In a small skillet, lightly brown walnuts in butter. Set aside.
Make dressing: In a medium bowl, whisk together lemon, walnut oil, pepper and salt.
Place lettuce in large bowl, add dressing and walnuts and mix well. Serves 4.
