1 large head Boston lettuce, rinsed, torn into pieces, wrapped in a towel and chilled
1/2 cup grated Parmesan cheese
3 tablespoons sweet butter (unsalted)
2 cloves garlic, peeled and slightly smashed with the back of a knife
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
Arrange lettuce on two individual salad plates or bowls. Sprinkle 1/4 cup Parmesan on top of each. In a small skillet, melt butter over medium-low flame. Add garlic, sugar, salt and pepper. Simmer, stirring until garlic starts to get golden. Don't brown the butter! Discard garlic pieces. Pour garlic butter over salads and eat immediately. Serves 2.
