Kale-Cranberry Salad with Pumpkin Seed Oil Dressing

A trip to Slovenia taught me about using pumpkin seed oil for salad dressing.  This delicious salad features kale, cranberries, Mozzarella Cheese and pepita nuts.


For dressing:

1/3 cup pumpkin seed oil

1/2 teaspoon salt

1 teaspoon pepper

2 - 3 tablespoons honey

For salad:

About 8 cups of chopped kale

1 cup dried cranberries

1 1/3 cup shredded Mozzarella cheese

1 cup roasted and salted pepita nuts

      The Recipe

Make dressing:  In a medium bowl, whisk together pumpkin oil, salt, pepper and honey.  Set aside.

Place kale in a large salad bowl.  Add cranberries, Mozzarella and salad dressing.  Toss well.  Add pepita nuts and give it one more toss.  Serves 4 - 6.
