2 English cucumbers

1 medium onion, chopped

1/2 teaspoon salt

1 cup mayonnaise

1/4 cup honey

1/4 cup apple cider vinegar

2 teaspoons ground pepper

Trim ends of cucumbers.  Cut in half width-wise and cut some (but not all) of the skin off, forming stripes down the cuke.

Cut into thin rounds and place in a bowl.  Add onion.

Make dressing:  In a small bowl, mix together mayo, honey, vinegar and pepper.  Pour over salad and toss.  Best served room temperature.  Store in refrigerator.  Serves 4 - 6.
