Red Hot Caesar Salad with Candied Pecans
When my husband Eric fiddles with my classic Caesar..
Ingredients
2 tablespoons butter
1 cup whole pecans
1/2 teaspoon salt
3 tablespoons brown sugar
Dressing:
3/4 cup olive oil
1/2 teaspoon EACH salt and pepper
2 teaspoons minced garlic
2 teaspoons brown mustard
2 tablespoons A-1 sauce
1/3 cup Red Hot sauce
3 hearts Romaine, chopped
1/3 cup lemon juice
1 cup grated Parmesan cheese
The Recipe
Melt butter in a small skillet. Saute pecans until lightly browned. Season with salt. Stir in brown sugar until it melts. Remove from heat and let cool.
In a large, deep bowl make dressing: Mix together olive oil, salt and pepper, minced garlic, brown mustard, A-1 sauce and Red Hot sauce.
Pile lettuce on top of dressing and give it a mix. Add lemon juice and Parmesan and mix again. Add candied pecans last and toss. Serves 4 - 6.
