Trim stalks, then cut broccoli into chunks. Microwave in a little water until nice and tender, about 10 minutes. Let cool slightly.
Meanwhile, heat vegetable stock in large pot.
Puree broccoli in food processor and add to stock. Stir in half-and-half and heat through. Sauté ground almonds in butter in a little skillet and add to soup. Season to taste. Serves 4. Perfect with a BLT or a turkey burger.
Option: While soup is heating, stir in a good splash of apple cider for a little extra zing.
