Murphy's Greatest Black Bean Soup in the World

My 6-year old granddaughter shows me how to make her fantastic, flavorful black bean soup.


2 cans black beans (one drained)

1 cup chicken stock

1 cup grape tomatoes

3 cloves garlic, minced

1/4 cup hemp seeds

1/4 cup avocado oil

1/4 cup potato starch

1 teaspoon ground cumin

1/4 teaspoon garlic salt

1/2 cup fresh cilantro leaves, coarsely chopped

Sour cream

Grated Cheddar (or other) cheese

      The Recipe

Empty black beans into a large soup pot.  Add chicken stock, tomatoes, garlic and hemp seeds.  Bring to a boil, reduce heat, and simmer for 20 minutes.  Remove from heat and puree with an immersion blender or electric mixer.

Stir in avocado oil, potato starch, cumin, garlic salt and cilantro.  (Note:  If you like your soup a little thinner, add more chicken stock).  Garnish with a dollop of sour cream and a sprinkling of cheese.  Serves 4.  Easily doubled.
