Apple Knocker Sausage Balls

It takes only two ingredients to make an addicting meatball that I like with scrambled eggs.


1 pound bulk seasoned pork sausage
1 ½ cups apple juice

      The Recipe

Roll pork into meatballs the size of golf balls and place in a large skillet (you’ll get 6 - 8). Cover meatballs with apple juice, bring to a boil, then simmer for 30 minutes uncovered; or until apple juice is almost gone and there is a wonderful shiny glaze on the pork. Add more apple juice if needed.  Serves 3 – 4.
By the way, an apple knocker was a person in the olden days whose job is was to knock apples off the trees with a long pole during harvest season.
