The Recipe
In a small bowl, mix together Ricotta cheese, lemon juice and sugar. Spread about 2 tablespoons of the mixture on four slices of bread. Top with remaining bread slices, to make four 'sandwiches'. In another bowl, beat eggs. Dip sandwiches in egg mixture and fry in butter just like you would regular French toast.
Meanwhile, make syrup: In a small saucepan, heat together 1/2 cup maple syrup and 1/4 cup amaretto (almond liqueur).
Absolutely delicious, especially with slices of fried Canadian bacon. Serves 2 or 4.
