Lemon-Lime French Toast - Breakfast with the Benzles

Thick slices of Italian bread soaked in a lemon-lime egg mixture and fried until golden brown.


4 eggs

2 tablespoons cream

2 tablespoons grated lemon rind

2 tablespoons lime rind

1/4 teaspoon black pepper

1 loaf Italian bread, cut into 1" slices

Butter for cooking

Maple syrup


      The Recipe

In medium bowl, whisk eggs.  Stir in cream, pepper and grated rinds.  Melt about 3 tablespoons butter in large skillet.  Dip four bread slices into egg mixture and fry in hot butter until golden brown.  Serve with a pat of butter on top of each, maple syrup and bacon.  Serves 2 (2 slices each).  If you want to make extra, it freezes well - place cooked toast on a cookie sheet in a single layer, freeze uncovered, and transfer to a gallon bag.  Reheat in oven, microwave or toaster.
