Macadamia Pancakes with Pineapple Syrup

Takes me right back to a long-ago breakfast in Hawaii.


Boxed buttermilk pancake mix

Macadamia nuts, chopped

1/2 cup (1 stick) butter

1/2 cup sugar

1/4 cup pineapple juice concentrate (from a frozen can)

Spam (optional)

      The Recipe

Make pancake mix according to package directions.  For each 6 pancakes, chop 2/3 cup macadamia nuts (with a food chopper or put in plastic bag and bash with a mallot).

Heat a little vegetable oil in a skillet or on a griddle and cook pancakes.  Meanwhile, in a small saucepan, melt butter and stir in sugar and pineapple juice concentrate.  (You can also fry up slices of Spam in butter at this point).

Pour syrup generously over pancakes and daydream about Hawaii.
