The Perfect Palm Beach Breakfast

Spicy Shrimp and Orange Omelette with Mozzarella


1/2 pound fresh, green shrimp, peeled and deveined

4 tablespoons butter, divided

1/2 teaspoon salt

1/2 teaspoon crushed red pepper flakes

3 eggs

1 tablespoon water

2-3 orange segments, diced

1/2 cup grated Mozzarella cheese

1/2 teaspoon orange zest


      The Recipe

Melt 2 tablespoons butter in a small skillet.  Coarsely chop shrimp, leaving three whole.  Saute in skillet, seasoning with salt and red pepper flakes, just until pink.  Remove from heat.

In a small bowl, whisk eggs with water.  Melt butter in medium skillet and add eggs.  Cook over medium heat until eggs start to get firm.  Sprinkle shrimp on half (save the three whole ones), top with orange pieces and Mozzarella.  When egg has lightly browned, fold over on top of the shrimp mixture and cook one minute more, or until cheese melts.  To serve:  Top omelette with the three whole shrimp and the orange zest.  Garnish with parsley.  Serves 2.
