Coffee 'n Cream Baked Donuts

Cake-like coffee donuts with a rich, creamy frosting.  You'll need a donut pan for this.


4 tablespoons butter, softened

1/3 cup vegetable oil

1/2 cup sugar

1/2 cup brown sugar

2 eggs

1 1/2 teaspoon baking powder

1/4 teaspoon baking soda

3 tablespoons instant coffee crystals

3/4 teaspoon salt

1 teaspoon vanilla extract

2 2/3 cup flour

1 cup milk


1 1/4 cups confectioners' sugar

1 tablespoon light corn syrup

1 tablespoon melted butter

3 teaspoon heavy cream

1/2 teaspoon vanilla extract

      The Recipe

Preheat oven to 425 degrees F.  Lightly butter the donut pan.

In a food processor, combine butter, oil and both sugars.  Blend in eggs.  Add baking powder, baking soda, coffee, salt and vanilla extract.  Process.  Then, add flour and milk, alternating for even distribution.  Fill each donut trough 3/4 full.  Bake 10 minutes and let rest for five minutes to cool down.

Meanwhile, make frosting:  In a medium bowl, combine all frosting ingredients with a fork.  With a knife, frost donuts and top with instant coffee.  Makes 18.  Note:  Freezes well.
