Baby Banana Bacon Pancakes
          

My two-year old sous chef helps me put together this kid-approved breakfast.


      Ingredients

2 cups pancake mix

1 cup milk

2 eggs

6 slices bacon, cooked until crispy

1 banana, diced

Vegetable oil

Lots and lots of syrup


      The Recipe

In a large bowl, mix together pancake mix, milk and eggs.  Crumble bacon in and stir in banana pieces.  Pour batter into a large measuring cup or bowl with a spout. Heat a little vegetable oil in a large frying pan or on a griddle and pour tablespoons of the mixture into the pan.  Cook until a little brown around the edges, slip and cook just a few seconds more until browned.  Serve with tons of syrup.  Makes about 40.
