The Perfect Scottish Breakfast
From a cattle farm overlooking Loch Ness, an amazing full Scottish breakfast (and then some).
Ingredients
Fried egg
Fried bacon (Canadian-style or even a slice of ham)
Mushrooms sauteed in butter with salt.
Half of a plum tomato, fried lightly in butter.
Pork sausage links, fried
Black pudding (aka blood sausage) - buy online
Clootie dumpling (like a thin slice of fruitcake, lightly fried)
Potato scone (see recipe below)
Toast with marmalade
OR
Scottish smoked salmon with scrambled eggs made with double cream and salt with lemon garnish
Coffee or tea
The Recipe
To make Scottish scones (flat potato cakes):
1 pound Russett-style potatoes, peeled, cooked and mashed
2 tablespoons butter
1/2 teaspoon salt
1 teaspoon sugar
1 egg
1/2 cup flour
1 teaspoon baking powder
In a medium bowl, mix together mashed potatoes with all ingredients. On a floured surface, roll out to 1/2" thickness. Cut into four wedges and fry in butter five minutes on each side, or until golden.
