Cherry Maple Granola

Tons of roasted nuts and coconut.


7 cups old-fashioned oats

1 1/2 cups wheat germ

1 cup unsalted sunflower seeds

1 cup unsalted chopped walnuts

1 cup unsalted chopped almonds

1 cup flaked coconut

1 teaspoon salt

1 teaspoon cinnamon

1 cup maple syrup

2 teaspoons vanilla extract

2 cups dried cherries

      The Recipe

Preheat oven to 300 degrees F.  Brush vegetable oil on two baking sheets with sides.

In a large pot, combine oats, wheat germ, sunflower seeds, walnuts, almonds, coconut, salt and cinnamon.

In a small bowl, whisk together maple syrup and vanilla.  Pour over oats and mix well.  Spread on oiled baking sheets and bake 45 minutes, stirring a few times to avoid burning.  Let cool completely.  Sprinkle dried cherries on top.  Makes about 15 cups.  Store in air tight container at room temperature.
