The Perfect Palm Beach Breakfast
A spicy shrimp omelet with creamy Mozzarella and orange.
1/2 pound fresh, green shrimp, peeled and deveined
4 tablespoons butter, divided
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1 tablespoon water
2 - 3 orange segments, diced
1/2 cup grated Mozzarella cheese
1/2 teaspoon orange zest
Melt 2 tablespoons butter in a small skillet. Coarsely chop shrimp, leaving three whole. Saute in skillet, seasoning and salt and red pepper flakes, just until pink. Remove from heat.
In a small bowl, whisk eggs with water. Melt remaining butter in medium skillet and add eggs. Cook over medium heat until eggs start to set to get firm. Sprinkle shrimp pieces on half, top with orange pieces and Mozzarella. When bottom of omelette has slightly browned, fold the plain half over on top of the shrimp mixture and cook one minute more, or until cheese has melted. To serve: Top omelette with the three whole, cooked shrimp and the orange zest. Garnish with parsley. Serves 2.
