1 lb. thick-cut bacon slices, cut into 1" pieces
1 cup flour
2 teaspoons black pepper
1 1/2 cups plain bread crumbs
2/3 cup packed brown sugar
1 1/2 teaspoons salt
Preheat oven to 400 degrees. Line two baking sheets with heavy foil.
Line up 3 medium bowls. In the first, mix together flour and black pepper. Whisk eggs well in the second. Blend bread crumbs, brown sugar and salt in the third.
Dip bacon pieces first in the flour mixture, then eggs, then bread crumb mixture. Place on prepared baking sheets. Bake 15 - 20 minutes or until crispy. Allow to cool before peeling them off the foil. Serve warm. Makes 100.
Note: Freezes well. Place cooked Bacon Bites on baking sheets, uncovered. Freeze. When frozen, transfer to freezer bags for future use. Reheat straight from the freezer in a preheated 400 degree oven for about ten minutes.
