Antipasto Bread Strips
          

Warm, crunchy strips of Italian bread covered in Antipasto Butter.


      Ingredients

1 stick butter, softened

1 tablespoon tomato paste

1 teaspoon dried oregano

2 tablespoons chopped black olives

1/2 cup finely chopped hard salami (I like Genoa), about 8 slices

1 loaf of crusty Italian bread, halved lengthwise

8 - 10 slices of Mozzarella cheese


      The Recipe

Preheat oven to 450 degrees.  Place butter in a medium bowl and add tomato paste and oregano.  Mix well.  Stir in olives and salami.  Spread mixture on cut sides of bread halves and place on baking sheet, butter side up.  Bake 10 minutes.

 

Remove bread from oven and turn oven to broil.  Arrange cheese slices on top and return to oven.  Broil just a couple of minutes, until cheese is brown and bubbly.  Allow to cool slightly.  Cut into 1" strips and serve immediately.  Enough for about 8 people.  Note:  Freezes well - before baking, freeze on baking sheets, uncovered, then transfer to freezer bags.
